Makes 6 servings
1 tablespoon oil
1 onion (medium), diced
1 pound ground meat (lean beef or turkey)
1/4 teaspoon black pepper
1 teaspoon garlic powder
1 teaspoon cumin
1 (14.5 ounce) can diced tomatoes with green chilis
(or 1 fresh tomato with 1 jalapeno)
1/2 cup tomato juice, low-sodium (low-sodium V8)
2 zucchini (medium), sliced and cut into bite size pieces
1. Heat oil in pan. Once hot, add onions. Cook until clear.
2. Add ground meat to pan and cook through. Add spices, canned tomatoes and tomato juice.
3. Cover pan and cook on low for about 10 minutes.
4. Add in zucchini and stir. Cover and cook about 5-7 more minutes.
Yellow squash can be used in place of zucchini.
