2 1/2 cups low-sodium chicken broth or water
1 cup long-grain rice
2 cups small broccoli florets (pieces)
2 cups shredded cheddar cheese
1 (8-ounce) ham steak, cut into 1/2-inch pieces
2 green onions, thinly sliced
- Heat broth in a large pan over medium-high heat. Add rice and cook, covered, over medium-low heat for 10 minutes. Add broccoli and cook, covered, until rice and broccoli are soft and liquid is absorbed (gone), about 8 minutes.
- Stir in cheese and ham until mixed. Top with green onions and serve.
