1 (16 ounce) box whole wheat pasta, uncooked
2 cups broccoli
1 red onion, chopped
1 red pepper, chopped
2 cups cherry tomatoes, cut in half
1 cup dressing (Italian, sundried tomato or balsamic vinaigrette)
1/2 cup Parmesan cheese, grated
- Cook pasta in large pot as directed on box. Add broccoli
to the boiling water for the last 3 minutes. Drain.
- Rinse pasta mixture with cold water; drain well. Place in
large bowl. Add all the rest of the ingredients except
cheese; mix lightly.
- Refrigerate 1 hour. Stir gently before serving; top with cheese.
